Chicken Parmesan Gnocchi Skillet =================================== ~40 minutes Ingredients: - 3 tbsp olive oil - 1.3 lb boneless skinless chicken breast (cut into 1 inch pieces) - 1 tbsp unsalted butter - 16oz package gnocchi - 1.5 cups reduced sodium chicken broth - 12 oz marinara sauce - 1/2 cup grated parm cheese - 1 cup shredded mozzerella cheese - fresh basil Instructions: 1) Add 2 tbsp olive oil in large (12" cast iron/oven safe) skillet over medium high heat. 2) Add chicken and cook 6-7 minutes, flipping as needed until no longer pink + fully cooked. Remove cooked chicken to plate 3) Place empty skillet back on stove over medium-high heat and add 1 tbsp olive oil + 1 tbsp butter. Swirl butter until melted 4) Add Gnocchi + break up any stuck together. Stir so the gnocchi is evenly coated 5) Cook, stirring occassionally, for 8-10 minutes or until all sides are golden-brown 6) Pour chicken broth into skillet and reduce heat to medium. Let broth reduce stirring occassionally, for 8-9 minutes until thick "sauce" coats gnocchi. 7) Add marinara sauce and cooked chicken to skillet + stir to combine. Let heat for 1-2 min then remove from heat 8) Sprinkle parm cheese over top + then top with mozz cheese 9) Put skillet in over on rack near top and set oven to broil.
